Rainbow Child; Beer, Wine, Cider, Whatever?
Every year, as we dive into this chaos of mixed fermentation, we remind ourselves: "Don't be boring!" Rainbow Child, our crazy hybrid cider, knows no boundaries except one: it must embody elements of beer, wine, and cider.
In 2020, we unleashed a wild symphony of cider apples, food apples, Solaris grapes (with a 14-day maceration), and a generous infusion of Citra hops. But that's not all - a cold maceration with elderflowers added a delightful herbal and floral twist, resulting in a mesmerizing wine/cider/beer hybrid. It's the epitome of fun, seriousness, and pushing boundaries.
The Fruit
Cider & food apples (Topaz & Aroma) from Tvedemose, Solaris Skins from dyrehøj wineyard, Elderflowers from Lystgården and Citra hops from To Øl.
All fruit is certified organic.
Process
Direct pressed apples, maceration on Solaris grapeskins, dry hopped and cold macerated with Elderflowers. zero additives. Disgorged.

7.1% Alcohol
