Cox i Pæren; Confusion in the pear
Cox I Pæren is our Nordic pear-based cider. It used to consist of Holsteiner Cox apples (cox) and pears (i pæren), but over the years, we have decided that it just tastes better with quince also in the mix. Cox I Pæren is a super juicy cider that tastes more like a pet-nat than a classic cider.
It's funky, super electric, and energetic with crazy fruity notes of papaya, lychee, and pineapples. This tropical party starter has a little bit of volatility and sweetness from the pears. Refined, fun, and very drinkable.
The Fruit
65% Eating Apples (Holsteiner Cox), 25% Pears (Conference), 10% Portuguese Quince.
All fruit is certified organic and grown locally.
Process
Direct-pressed apples and pears spontaneously fermented together, Quince maceration, Zero additives. Disgorged.
